Summer Zucchini Squash The Farmhouse Gourmet
Looking for a delicious recipe for the local zucchini?! Try the No Fry Zucchini Parm!
1. Preheat oven to 425
2. Slice the zucchini into strips within a mandoline
3. Coat the bottom of a pan with fresh tomato sauce
4. Add a layer of fresh raw zucchini, top with grated cheese
5. Continue to layer sauce, zucchini, cheese until the pan is full
6. Bake covered for 30 minutes
7. Bake uncovered for another hour
8. When liquid evaporates, cover top with mozzarella cheese until melted
9. Enjoy!
